Rustic Apple Pancake

This golden and fluffy pancake is full of cozy flavour.
serves: 2-3
Ingredients:
– 1 cup all-purpose flour
– 2 tbsp brown sugar
– 1 tsp baking powder
– ½ tsp ground cinnamon
– ¼ tsp salt
– 1 cup milk
– 1 large egg
– 2 tbsp melted butter (plus more for cooking)
– ½ tsp vanilla extract
for the apple topping:
– 1 medium apple, thinly sliced
– 1 tbsp brown sugar
– ½ tsp cinnamon
– 1 tbsp butter

Preparation:
- In a bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, mix milk, egg, melted butter, and vanilla. Combine wet and dry ingredients until just smooth. Don’t overmix.
- Cook the apples. Heat 1 tbsp butter in a non-stick skillet over medium heat. Add apple slices, sprinkle with brown sugar and cinnamon. Cook for 2–3 minutes until slightly softened and caramelized. Remove from pan and set aside.
- Make the pancake. Wipe the skillet clean and melt a little more butter. Pour a ladleful of batter into the pan. Quickly arrange a few apple slices on top of the batter. Cook for 2–3 minutes until bubbles form and edges look set.
- Flip carefully and cook another 2 minutes until golden and cooked through. Place pancake on a plate, apple-side up. Sprinkle with cinnamon sugar or drizzle with maple syrup. Serve warm with a pat of butter.
Tips & Variations: Add chopped nuts (like pecans or walnuts) for crunch or use buttermilk instead of regular milk for extra fluffiness. Try a mix of apple varieties for depth of flavour.
