Quinoa Breakfast Bowl (1 serving)

A warm, nourishing, high protein bowl perfect for breakfast or a mid day energy boost.

Ingredients

  • ½ cup cooked quinoa (about ¼ cup dry)
  • 1 small banana, sliced
  • 2 tbsp blueberries (fresh or frozen)
  • 1 tbsp peanut butter
  • 1 tsp honey (optional)
  • 1 tbsp shredded coconut
  • a splash of milk or plant milk (optional, for creaminess)

Instructions

  1. Cook the quinoa
  • Rinse ¼ cup dry quinoa under cold water.
  • Add it to a small pot with ½ cup water.
  • Bring to a boil, then reduce heat and simmer for 10–12 minutes until fluffy.
  • Let it rest for 2 minutes, then fluff with a fork.
  1. Assemble the bowl
  • Place the warm quinoa in a bowl.
  • Add the sliced banana, blueberries, shredded coconut, and a spoonful of peanut butter on top.
  1. Finish
  • Drizzle with honey.
  • Add a splash of milk if you prefer a creamier texture.
  1. Serve immediately and enjoy the warm–cold contrast.
